I grew up on a Texas Ranch & this details all the frontier food we prepared & then some !Numerous different recipes offered for any one specific item.This is definitely for the food courageous explorer !
Great information and got the gears turning. Only thing I didn't like, and it's a big deal, is that it's poorly organized. It's more of a coffee table book than well organized and easy accessed cook book. The recipes aren't organized in an easy to find manner. You'll have to hit the glossary to find what you're looking for. That's frustrating.
I've been waiting for this book since I knew about Cosentino's predilection for offal. I too am a fan of guts and such. I really like the design and writing of the book.
